Found the most ginormous Satsuma tangerines at a Kroger today when I was there to buy lemons. These are the absolute best tangerines on this planet IMHO.

And of course, they were $3.99/pound, so $7.38 for these TWO tangerines, because...#Kroger.

We made sinfully delicious Blistered Shishito Pepper Brunch Pizzas! These bad bois were topped with crispy garlic butter sauce, freshly shredded monterey jack cheese, caramelized onion, an over easy fried egg, and a hot honey drizzle. We ate them both in one sitting. No ragertz. 10/10 would, and most likely will do again. 🤤🍕

Thai Lentil Red Curry with fresh Tofu Summer Rolls, paried with an incredibly delicious ginger and blood orange gin cocktail made by myself and @sebalicious! We enjoyed entirely to much of this meal in a candlelit setting. And I'm still dreaming of every delicious bite. We sure known how to throw an amazing meal to share.

In our #Eugene local daily (which sadly is a shell of its former self these days, grrr) I saw we have a new Vietnamese restaurant in town, Pho King.

I thought these guys are super cleaver, but as it turns out, apparently this is not the first time anyone has used that sorta kinda suggestive name.

I have to say, I bet they have some PHO KING good chow.

But is it pronounced "Fuh" or "Fow" (rhymes with mow)?? I am going with Fuh, rhymes with...Duh.

So I have a working theory about #Mastodon. Stay with me here...

I have started following a ton of new hashtags for #photography, #travel, #pizza, #nature, #DogsofMastodon and just now, #foodporn.

My theory is if I populate my feed with enough stuff that brings me joy, seeing the few political posts/toots will be easier to bypass if I so choose.

This is the #1 reason I love this platform. I am in control of my own custom algorithm. No #BigTech crypto clowns forcing it all on me.

Banana bread but I added pistachios, dried cranberries, and marshmallows and used cream cheese frosting and some kind of blood orange? Idk what kind of citrus this was but it was amazing!
I'm actually awful at baking because I don't have the patience to measure things... but GOT DAYUM.

Easy Muffin Tin Cottage Cheese Egg Bites

Ingredients

6 large eggs
1 cup whole milk cottage cheese
1/4 tsp salt
1/4 tsp ground black pepper

Optional Ingredients: about 1 - 2 tbsp TOTAL

chopped green onions
diced tomatoes
diced mushrooms
chopped spinach or Swiss chard
diced bell peppers
minced cooked ham or sausage
chopped cooked potatoes
chopped asparagus
chopped broccoli

Instructions

Set your oven to 350 degrees F.
Prepare a silicone muffin pan by spraying each individual cup lightly with oil. Set the pan onto a baking sheet so you can easily move it around without spilling the ingredients. Set aside.
Use a food processor or hand blender to combine the eggs, cottage cheese, salt and pepper. Blend until smooth.
6 large eggs, 1 cup whole milk cottage cheese, 1/4 tsp salt, 1/4 tsp ground black pepper
Pour the egg mixture into the prepared muffin cups, dividing it evenly between the 12 cups.
Add the extra ingredients, about 1 - 2 tbsp for each cup. You can even make them all different if you like. Give a little stir.
Bake for 30-35 minutes. It may take longer depending on how many optional ingredients you have added.
Serve immediately. Or let cool and freeze for later (see recipe tips above).
