Next thing Easy peasy palak paneer #recipe
Ghee, bay leaf, sputter cumin seeds and add minced ginger and garlic till fragrant, chopped chillies and ½ onion till gently brown then some oil and turmeric, cumin powder, garam masala generous pinch and then spinach - wilted and blended, mix, add the browned paneer from 👆🏽 and mix. Salt, taste, a touch of cream to bring it together and that's it!

Recipe: Thai Yellow Chicken curry (Gaeng Karee Gai) 🇹🇭

Made tonight, this was a huge success, based on the recipe below but I added extra Malaysian 🇲🇾 influences in the spice mix. Serves 2.

5 small waxy new potatoes, quartered
400ml thick coconut milk
Yellow curry paste (I used Mae Ploy)
1 tbsp palm sugar (I used brown)
1 tbsp tamarind paste
300g skinless chicken thigh fillets/breasts, cut into bite-size pieces
1 tsp curry powder (I used Babas, a Malaysian brand)
1 carrot, cut into thin rounds
1 onion, quartered (I added this)
2 tbsp Thai fish sauce
10 baby plum tomatoes, halved

In addition to the recipe I sautéed 4 cloves of chopped garlic, a cinnamon stick, 2 star anise and 5 green cardamom pods in oil before adding the coconut milk (then yellow curry paste). Also chucked in some coriander at the very end ... and I used chicken stock to slow cook it.

Today I made two mini cheesecakes and a cheesecake, all of them with blueberry topping. I tried one of the small ones. It was good ☺️
For the blueberry sauce, I cooked 300 g of fruit with a tablespoon of sugar. It boiled 5 minutes. I mixed it later, added the juice of a lemon and a teaspoon of maizena previously disolved in a tablespoon of water. Then I cooked it for another minute and let it cool.
For the cheesecake mix and crust, I used this recipe, but baked only 5 minutes the crust and used waxed paper on the baking mold:

Yesterday was a lovely day out in Sheffield with @IsabelB and both of us meeting @jen for coffee and lunch ... me being me, we ended up at a couple of amazing Asian supermarkets where I bought three rare Thai 🇹🇭 ingredients to try out:

  • Sataw beans (aka "Stink beans") for a future shrimp stir fry, Goong Pad Sataw. Will post on this in future, I never made it before

  • Thai yellow eggplants. No idea! But could go into a coconut based curry ...

I think I'm about done with red meat, I've had three different meats go bad within several days of purchase, and I'm tired of wasting food and money. I've played with vegetarian and flexitarian diets before and have always gone back to "normal" diet because it's easier with a family, but I think I'm done this time. I've never been a huge red meat eater in the past and wanted to limit it, anyways. If you've got any great meatless recipes, send them my way! #recipe #Foodie #food

Wacky Cake
This recipe comes from the Great Depression when butter, eggs, and milk were rationed.
DRY
1.5 cups flour
1 cup white sugar *
4 tbsp cocoa powder
1tsp baking SODA
1/2 tsp salt
WET
1 cup warm water
6 tbsp oil*
1 tsp vanilla extract
1 tbsp white vinegar

1. Preheat oven 350°F
2. Spray oil two 8"x8" baking pans. ** This needs to done BEFORE you mix the batter.
3. In a large bowl add all DRY ingredients and whisk well to distribute the baking soda evenly. Create a well in the center.
4. In another bowl, add and stir together all the WET ingredients.
5. Give the wet ingredients a quick stir to incorporate the oil and slowly pour into the DRY ingredients. Whisk together until all the lumps are gone. The batter will froth a bit because the vinegar and baking soda are reacting.
6. IMMEDIATELY divide the batter between the two baking pans. Tap the pans on the counter to remove any larger bubbles. Place in oven and bake at 350°F for 12-15 mins.
** Until tooth pock pulls clean.
* I use 3/4 cup of sugar and only 5 tbsp oil to reduce calories.
This cake also freezes well.
If you use 2 - 8"x8" pans the layers will be thin and will cook with 12-15 minutes.
** If use only 1- 8"x8" pan, it will take 18-20 mins.
Extra: instead of frosting, I add a handful of chocolate chips to top of cake when come out of oven to melt, then spread evenly w spatula. This creates a chocolate coating like on z dingdong.

Random Thai 🇹🇭 #cooking / #food thought for today: authentic thai cuisine rarely uses more than two vegetables in a dish, excluding shallots which are ubiquitous.

If you see a Thai recipe loaded with vegetables, it's almost certainly been Westernised.

The only exception coming to mind is a "Jungle Curry" or แกงป่า, which is northern thai cuisine and is vegetable-heavy.

Apple Dapple Cake

Ingredients
Cake

1 cup granulated sugar
1 cup light brown sugar
1 1/2 cups vegetable oil
3 large eggs
2 tsp vanilla
3 cups all-purpose flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 1/2 cups apples peeled and chopped
1 cup pecans chopped

Glaze

1 stick butter
3 1/2 tbsp all-purpose flour
1 cup milk
1/2 cup granulated sugar
1/2 cup light brown sugar
1 tsp vanilla
1/4 tsp salt

Instructions

Preheat oven to 325 degrees F. Grease a 9x13 metal cake pan and set aside.

Cake

In the bowl of a stand mixer fitted with the paddle attachment, cream together the wet ingredients - oil, eggs, sugars and vanilla. Beat on high for a couple of minutes until the mixture is pale and fluffy.
In a large bowl, whisk together the dry ingredients - flour, cinnamon, baking soda and salt.
Slowly add the flour mixture to the oil mixture. Mix on low. Scrape down the sides of the bowl with a spatula and mix again on medium speed until well combined.
Add the fresh apples and pecans to the cake batter. Beat on medium-low speed until the batter is well combined.
Spread the cake batter evenly into the prepared cake pan. Bake on the center rack of the oven for 50 - 60 minutes, or until the cake is puffed up in the center and the top is browned.

Glaze

During the last few minutes of baking, melt the stick of butter in a small sauce pan over medium-high heat. Swirl the butter continuously for a couple of minutes until the butter is starting to brown.
Reduce the heat to medium Add the flour and whisk, cooking for about 1 minute.
Add the milk, sugars and vanilla. Keep whisking and cooking the glaze mixture until it is bubbling and thickened. Remove from heat.
Pour the hot glaze evenly over the top of the hot cake. Use an offset spatula to spread it evenly, like a frosting.
Allow the uncovered cake to cool to room temperature before serving.

Easy Muffin Tin Cottage Cheese Egg Bites

Ingredients

6 large eggs
1 cup whole milk cottage cheese
1/4 tsp salt
1/4 tsp ground black pepper

Optional Ingredients: about 1 - 2 tbsp TOTAL

chopped green onions
diced tomatoes
diced mushrooms
chopped spinach or Swiss chard
diced bell peppers
minced cooked ham or sausage
chopped cooked potatoes
chopped asparagus
chopped broccoli

Instructions

Set your oven to 350 degrees F.
Prepare a silicone muffin pan by spraying each individual cup lightly with oil. Set the pan onto a baking sheet so you can easily move it around without spilling the ingredients. Set aside.
Use a food processor or hand blender to combine the eggs, cottage cheese, salt and pepper. Blend until smooth.
6 large eggs, 1 cup whole milk cottage cheese, 1/4 tsp salt, 1/4 tsp ground black pepper
Pour the egg mixture into the prepared muffin cups, dividing it evenly between the 12 cups.
Add the extra ingredients, about 1 - 2 tbsp for each cup. You can even make them all different if you like. Give a little stir.
Bake for 30-35 minutes. It may take longer depending on how many optional ingredients you have added.
Serve immediately. Or let cool and freeze for later (see recipe tips above).
